Milk and dairy products

A growing demand for milk and dairy products in urban centres induced farmers in the 19th century to concentrate on milk production. They often organised themselves in cooperatives in order to control the process of transforming milk into cheese, butter and other dairy products which were also exported to North America. From the early 1920s onwards, state authorities and agricultural institutions used films for illustrating the process of production, the making of dairy products and the nutritional value of milk for consumers.
